Field greens, seasonal berries, Colorado 'Haystack Mountain' goat cheese crumbles, honey and lemon vanilla vinaigrette dressing.

Carne Asada with Flour Tortillas
Aged skirt steak with southwestern lime and garlic marinade served with flour tortillas.

Tortilla Encrusted Chicken Breast
All natural Red Bird Farms chicken breast pinwheels stuffed with roasted green chiles, Colorado 'Haystack Mountain' goat cheese encrusted with crispy crushed tortillas. Topped with red onion marmalade, served with chipotle jus.

Corn Tamales
Prepared with tender sweet mesa and authentic spices then bundled in their corn husk package and steamed to perfection.

Palisade Peach Crisp
Juicy western slope peaches used in this sweet crispy dessert. Served warm. (Western slope peaches will be used when available)
