Southern Bruschetta - Toasted bruschetta with a cream cheese, garlic and sweet pea puree; topped with okra, sweet corn, Vidalia onion and cherry tomato wedges.
Horseradish Deviled Eggs - An old fashioned favorite kissed with a touch of spicy horseradish.
DINNER BUFFET
Creamy Coleslaw - Napa cabbage, red cabbage, shredded carrots with our creamy homemade dressing.
Smoked St. Louis Ribs - Classic St. Louis cut rib serving only the meaty top part of rib with our custom SmokySouthern Rub and cooked slow and low with hickory.
Humdinger Burgers - Extra lean ground beef mixed with chopped onion, roasted green chiles, garlic, paprika and lightly smoked. Served on a bun with lettuce, tomato and onion.
Potatoes Paprika - Red potatoes wedged and tossed in olive oil, then sprinkled with our custom mixture of paprika, pepper, thyme and salt, then oven roasted.
Sweet Corn with Green Chiles - Fresh corn from the cobb with roasted green chiles and red bell pepper blended with our special seasonings and foil cooked on the grill for a sweet, savory side to any smoked entrée.
